Inspired by the Baci Valentine’s Day cocktail, this recipe adds a unique twist to a new favourite.

White Peach & Rose Bellini

A delicate and floral twist on the classic Bellini, perfect for elegant gatherings.
Ingredients (Makes 2 servings)
  • 2 ripe white peaches, peeled and sliced
  • 1 tbsp rose syrup (or ½ tsp rose water + 1 tbsp simple syrup)
  • 1 tsp fresh lemon juice (optional, for balance)
  • 1 bottle Prosecco, chilled
  • Dried rose petals (for garnish, optional)
Instructions
  1. Prepare the Peach Purée:
    • Blend the white peaches with rose syrup (or rose water + simple syrup) until smooth.
    • Strain through a fine-mesh sieve for an ultra-smooth texture (optional).
    • Stir in lemon juice for a slight acidity boost.
  2. Assemble the Bellini:
    • Spoon 2 tbsp of the peach-rose purée into a chilled Champagne flute.
    • Slowly top with Prosecco, gently stirring to combine.
  3. Garnish & Serve:
    • Sprinkle with dried rose petals or garnish with a thin slice of white peach.
Tips & Variations:
  • Non-Alcoholic Version: Substitute Prosecco with sparkling water or a non-alcoholic sparkling wine.
  • Extra Floral Notes: Add a dash of elderflower liqueur for a more aromatic twist.
  • Frozen Version: Freeze the peach purée into cubes and blend with Prosecco for a slushy-style Bellini.
