- 2 ripe white peaches, peeled and sliced
- 1 tbsp rose syrup (or ½ tsp rose water + 1 tbsp simple syrup)
- 1 tsp fresh lemon juice (optional, for balance)
- 1 bottle Prosecco, chilled
- Dried rose petals (for garnish, optional)
Instructions
- Prepare the Peach Purée:
- Blend the white peaches with rose syrup (or rose water + simple syrup) until smooth.
- Strain through a fine-mesh sieve for an ultra-smooth texture (optional).
- Stir in lemon juice for a slight acidity boost.
- Assemble the Bellini:
- Spoon 2 tbsp of the peach-rose purée into a chilled Champagne flute.
